Cracked Corn Country Loaf with Parmesan

This loaf was inspired by a customer who brought me half a loaf from Ibis Bakery (worth a visit if you're in the KC area), and wanted to know if I could make it. A little improvisation and a couple of tries later, it's on the menu (I love a challenge)! A thyme scented porridge of cracked corn is mixed into a naturally leavened country loaf and punctuated with cubes of Parmesan cheese. Savory, earthy, tangy, moist, chewy and delicious!
