Kyiv Buckwheat Sourdough

Buckwheat is a commonly eaten grain in Ukraine, often as a side dish, porridge, or in soup. This loaf is naturally leavened with a sourdough starter and uses about 20% buckwheat flour which adds an earthy flavor. Lightly sweetened with a little honey, the texture is chewy and elastic, great for toast, sandwiches, and general eating.
