Inspired by the SeaWolf Bakers in Seattle, WA, this is a unique confection halfway between cookie and candy. Thin slices of Cathy's buttery croissants are soaked in caramel and baked long and slow until they become a crispy and slightly chewy, toffee-esque cookie. Two varieties: Almond Crunch, or Chocolate Glazed with Almonds. Share with a friend over a hot cup of coffee or tea--delicious & addictive!
