Cheddar & Onion Wine Bites

I discovered Dean's cheese bites in Scotland this summer (ate a whole box myself!), and have been trying re-create them ever since.  While I can't say these are the same, they just may be even more irresistable! These tiny cheesy bites are a tender, shortbread-style cracker, with tangy cheddar flavor and the savory sweetness of caramelized onions. A dash of cayenne pepper, paprika, and sea salt give them a pleasant bite. They are the perfect accompaniment to drinks before a special meal, when you want something simple but unique to a whet your guests appetites and set the stage for the feasting to come!
