Raspberry Almond Croissants

In San Francisco and Singapore bakeries a couple of summers ago, I discovered twice-baked almond raspberry croissants made with a thick topping of almond cream on the outside (which becomes a soft and chewy crust when baked), filled with a healthy spread of seedless raspberry jam, and topped with sliced almonds and fresh raspberries. Totally different from how I'd made them for years, and totally delicious! Hope you think so too!
