Hummingbird Cake
Not all Thanksgiving desserts have to be pie!
In 1970, the Jamaica Tourist Board exported the recipe for Hummingbird Cake in media press kits to the US to create interest in visiting the island. Named after the island's national bird, the scissors-tail hummingbird, the cake quickly became a culinary sensation, especially among Southern homemakers. This version features three layers of a moist banana cake with toasted pecans and crushed pineapple. The center layer has a luscious pineapple filling, with the remaining layers filled and coated with cream cheese frosting. The exterior is coated with more toasted pecans, making a large, beautiful and delicious cake for a special celebration! (Freezes very well).

bananas, pecans, unbleached flour, cream cheese, powdered sugar, sugar, butter, pineapple, vegetable oil, eggs, vanilla, salt, baking soda, cinnamon
